Loaded with *good* fat.

10 servings


2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon baking soda
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinamon
1 egg
1/2 cup peeled/mashed avocado (about the size of 1 medium)
3/4 cup buttermilk
1/2 to 3/4 cup chopped walnuts, pecans or pistachios (or raisins!)
1-1/2 teaspoon lemon or orange zest (optional)

preheat to 350 degrees F

grease 9 x 5 metal loaf pan

mix dry ingredients well

mix egg and mashed avocado separately

pour into dry ingredients and mix really well. it will be thick

pour into the greased pan, bake 40 to 50 minutes. do a toothpick test. watch carefully, do not overbake

cool for 10 minutes then turn out of pan to coll completely

Yummy! Think I might try the pistachios as an additive; have some, & love those as much as avocados. ;)

sounds interesting.... have you tried this? i'll admit i'm a little leary of the thought of avacados in bread.

No, sweetie, i haven't tried it. But, i'm gonna.

It did come to me from a reliable source. You know how i am about loosing emails and such - so i put it here so i wouldn't loose it.
