I made this for a meeting Thursday and made it diabetic friendly. I will show recipe options for sugar-free.

1 can crushed pineapple
2/3 cup sugar (or 1/2 cup Splenda)
8 oz of creamed cheese (or 1/3 reduced fat creamed cheese)
1 sm. box lemon jello (or sugar free lemon jello)

Heat pineapple and sugar until it boils.
Boil 3 minutes. Remove from the heat.
Add jello, stir to blend
Add cream cheese, and stir to blend.
COOL

After the mixture has cooled, add:
2 chopped red apples, unpealed
1 cup chopped celery
1 cup chopped walnuts or pecans
1 cup miniature marshmallows
1 container of KoolWhip (or sugar free KoolWhip)

Pour into glass dish and top with mandarin orange slices or apple slices.

CHILL

Very pretty, very refreshing and delicious.

I do not see how to edit anything on this forum. So I will just add here that you do NOT drain the crushed pineapple. And it is the standard size crushed pineapple.
