When I am too tired to tread on water or swim, I just look to the sky and float. It requires very little energy and if you can relax and feel God’s love shining on your face, you may find life a bit easier for the moment.

Escalloped Potatoes and Ham (using leftover ham)
Peal and slice potatoes; chunk leftover ham
Fill a casserole dish 2/3 full with potatoes and ham
In a saucepan, on medium heat:
Melt 1/2 stick butter
Add 1/4 cup flour and blend
Add 3 cups milk, salt and pepper; stir until thickened
Pour white sauce over potatoes and ham
Bake, covered for 1 hour at 350 degrees
Uncover the last 15 minutes to allow the top to brown.
Option: sprinkle grated cheese on top the last 15 minutes.
This is our favorite way to enjoy leftover ham. My grandmother made it when I was a child and it is now Stephen's favorite casserole.
