Lemon Pepper Chicken Breasts
This is one of my favorite recipes for a non-salt, no-fat meal:
Marinate boneless, skinless chicken breasts in lemon juice for 2 hrs.
Drain lemon juice
Place breasts in baking dish
Sprinkle with lemon pepper
Top each breast with a lemon slice
BAKE 45 min. at 350 degrees
OPTION: Instead of lemon pepper, drizzle each breast with honey and have Honey Lemon Chicken breasts

This is one of my favorite recipes from Weight Watchers. I love it served over mashed potatoes, made with the left over chicken broth. Of course, you have to add more WW points for the potatoes. :basic02 I have never added scallions.
Ingredients:
2 c. chicken broth, divided
1/4 c. flour seasoned with salt & pepper
4 4 oz. skinless, boneless chicken breasts
1 16-oz. can stewed tomatoes
3-4 scallions, chopped
Preparation:
Pour 1/2 c. of broth into wide bowl; place flour mixture on plate. Dip each chiken breast in broth, then flour, turning to coat all sides. Cook chicken over medium heat in sprayed skillet; turn to cook on all sides. Set chicken aside. Add remaining flour to skillet; stir until browned. Slowly add remaining broth;cook until slightly thickened. Add tomatoes and scallions to skillet; bring to boil. Reduce heat to low; return chicken to skillet and simmer until chicken is cooked through, about 10 min.
Notes:
1 serving is 4 WW pts.
