This recipe can be made in 2 loaf pans instead of a 9x11 cake pan if you want, but it's better cut into squares & served like cake ;)

1/2 c shortening
2 eggs
1 c sugar
2 c flour
1 t baking soda
1/8 t salt
3 medium bananas - mashed
1/4 c nuts (optional)
1/4 c chopped marischino cherries
1/2 c chocolate chips

cream shortening, eggs & sugar. add flour, soda & salt. mix in bananas. fold in nuts, cherries & chocolate chips.

pour into prepared 9x11 cake pan, bake at 350 for 45-60 minutes. cake is done when toothpick insterted in center comes out clean.

(mom can bake hers for 45 minutes in her oven, but for some reason it takes closer to an hour to bake it at my house!)

Title: Arizona Elephant Ears Or Navajo Bread Or Indian Fried Bread
Yield: 1 Servings

Ingredients

4 c unsifted flour
1 ts salt
3 ts baking powder
1 1/4 c lukewarm water

Instructions

Mix dry ingredients. Add water and knead thoroughly. Cover and let
stand 10 minutes. Roll dough into balls about 2 inches in diameter
and roll them out flat with a roling pin. Cut two slashes in center.
Fry on both sides in hot grease until brown. Makes 10 to 12 portions.

For the dessert version: drizzle with honey and sprinkle with
powdered sugar.

For a Navajo taco, top with refried beans, chopped tomatoes, onions,
and grated cheese. Serve with salsa.

HUSH PUPPIES


These delectable little balls of fried seasoned cornbread are incredibly addictive. Be careful; it's easy to fill up on these!

* 2 cups yellow corn meal
* 2 tablespoons flour
* 2 teaspoons baking powder
* 1 tablespoon sugar
* 2 teaspoons salt
* 1/4 cup finely chopped onions
* Freshly ground black pepper to taste
* Boiling water
* 1 egg, beaten
* 1/4 cup milk
* Oil for frying

Heat oil in deep skillet or fryer to 375°F.

Mix all dry ingredients except the baking powder. Pour in enough hot water to make a thick mush, making sure all ingredients are moistened. Add milk, egg and baking powder and mix thoroughly.

Drop by spoonfuls (or use a small ice cream scoop) into oil, and fry until golden brown.

Marvelous with fish or shellfish. Fried catfish and hush puppies are a particularly classic combination.
