Below is my daughter's delicious version of the ever-popular Lettuce Wraps found in many restaurants such as P.F. Chang's and Chili's.

Lettuce Wraps

Green leaf lettuce (washed and used as crisp whole leaves)
Avocado (diced)
Tomatoes (chopped)
Cojita cheese (crumbled) [If this Mexican cheese is unavailable, use freshly grated Parmesan]
Red onions (small ones - diced)
Banana peppers (diced)
Almonds (chopped and extra toasted)
Cilantro (chopped)
Garbanzo beans
Lawrey's seasoning
Sea salt (if desired)Dressing

Tahini
Lemon juice (fresh)
Sea salt
Garlic (granulated) [Garlic Magic is a wonderful brand]Directions

Assemble ingredients in center of lettuce leaves.
Top with some of the dressing.
Wrap and enjoy - with plenty of napkins on hand.This is a cool summer meal to prepare and is something different from the typical salad type meal.
