1 can (8oz) crushed pineapple
1 pkg. (6 oz) lemon gelatin
1 cup gingerale chilled
1 can (16 oz) jellied cranberry sauce
1/2 cup chopped peeled apple
1/2 cup chopped celery
1 pkg. (8 oz) cream cheese softened
1/4 cup sugar
cool whip
1/2 cup chopped pecans
drain pineapple; reserving juice. set pineapple aside. Add enough water to juice to measure one cup. Pour into small saucepan and bring to boil. Carefully pour into large bowl; stir in gelatin until dissolved. Add ginger ale. Refrigerate until syrupy, about 45 minutes. Combine cranberry sauce, apple, celery and reserved pineapple; fold into gelatin mixture.
Transfer to a 9 inch square dish. Refrigerate until firm.
In small mixing bowl, beat cream cheese and sugar until fluffy. Fold cool whip into cream cheese mixture; spread over gelatin. Sprinkle with pecans.

STRAWBERRY PRETZEL SALAD
Layer 1
2 cups Pretzels, crushed
½ cup granulated sugar
1 stick margarine, melted
Mix together pretzels, sugar and margarine. Press into 9 x 13 inch baking dish. Bake at 350 degrees for 10 minutes. Let cool in refrigerator.
Layer 2
1-8 ounce package cream cheese, softened
1 cup powdered sugar
1-12 ounce carton Cool Whip
Beat cream cheese. Add powdered sugar and continue beating. Finally, add Cool Whip to cheese and sugar mixture. Spread on top of pretzel layer.
Layer 3
1-6 ounce package strawberry gelatin
1 1/3 cups boiling water
2-10 packages frozen strawberries with juice
1-8 ounce carton Cool Whip
Dissolve gelatin in boiling water. Partially cool, then add strawberries and let partially set. Spread on top of cheese layer. After gelatin mixture has set top with a layer of Cool Whip and serve.

Taco Salad
Fry one pound of ground chuck and add one can of chili hot beans
Make a salad of:
lettuce
grated cheese
finely chopped onions
finely chopped tomatoes
Place salad mix in large bowl
Top with hamburger/chili hot bean mix
Top with crushed Fritos corn chips
Serve immediately. Have sour cream available for those who like sour cream with their taco salad.

I was suprised to see Barb had already posted a recipe for taco salad. Here is the recipe I use.
Ingredients:
1 lb. ground turkey
1 can kidney beans
1 head lettuce, shredded or torn
onion
8 oz. grated fat free cheddar
1 c. fat free Thousand Island dressing
Preparation:
Brown turkey and onion together. Add kidney beans, lettuce, and cheese. Just before serving, add dressing. Makes about 12 Cups. Serve over tortilla chips.

Chicken Salad
Either boil and bone and chop chicken into small pieces, or used canned chicken breast
Add finely chopped celery
Salt to season
Blend in Miracle Whip or mayonaise, whichever you prefer
Now, some people add:
finely chopped boiled eggs
Or halved seedless purple grapes
Or finely chopped apple, with pealing still on
Or chopped walnuts or pecans.
Arby's makes a chicken salad using celery,walnuts, apples and grapes and mayonnaise. I love it.
When I make it at home I just blend the chopped chicken, chopped celery, salt and Miracle Whip, but I love it with the grapes added.
Some places use pickle relish in their chicken salad.
Think of the chicken salad you have enjoyed at any restaurant and think of the ingredients that made it good. Then make your own version of it.
But, the main ingredients are the chicken, celery and mayonnaise. Just make sure all ingredients are chopped into small pieces.

The following is a 7 Layer Raw Salad that i developed in my nutrition class that will enable you to obtain all the necessary vitamins needed daily. Please, substitute the items used if they are contraindicted with your medication or diagnosis...for example: if you are on Coumadin don't use the spinach.
If you have no health issues this salad is perfect and keeps up to 5 days.
Large bowel
1. spinach
2. tomatoes - this is where i season the salad with herbs. i put some salt/pepper/dill weed and other herbs. The tomato absorbs the seasoning well.
3. frozen english peas (i simply open while frozen)
4. purple onions
5. bell peppers (make sure that at least some of them are green. One needs three servings of green vegetables daily. The other varieties of bell pepper make the salad very appealing.
6. cheese
7. 6 boiled eggs
i pour one cup of grapeade oil or olive oil over the salad. The original 7 layer recipes call for one cup of oil and one cup of mayoannaise. i omit the mayoannaise for calorie/fat purposes. One cup of oil is sometimes more than enough for me. Sometimes i even cut it more.
Allow the salad to sit for 10 hours before eating. The flavors mix together, the oil perserves it for 6 days.

Thanks for that recipie Barb. I made some today, and have made it with grapes, but i think the apples would be nice and add color. Going to try it again soon! Rosalie

Wow. can't spell my name. Another recipie I like is rice-pudding. i made that tonight, and the chicken salad this afternoon. Haven't made that in awhile, but tried it and turned out good, but with wild rice instead of white. I used the recipie out of my new cookbook. Rosalie

Does anyone live near a Kroger store?
I purchase a Mexican Bean Salad there and it is just wonderful.
It is not hot. The dressing is great, but do not know just what is in it.
It is like a vinegar dressing, but not sour or tangy.
It is six dollars for a pint and I know I could make it cheaper if I knew the dressing recipe. HELP
They are great for giving tastes.

Is it similar to the dressing on 3 bean salads? If that is the case it is equal amounts of vinegar, oil and sugar with salt, pepper and a dash of Worchestshire sauce. If it is on a Mexican bean salad, I would guess that it might have a dash of hot sauce, but not much if it is not hot to your taste.
Some people do not like that much sugar so they would use 1/2 cup of vinegar, 1/2 cup oil, and 1/4 cup sugar. That is what I usually do for 3 bean salad. Actually, I often make that as a regular salad dressing if I am making a huge tossed salad for a potluck.
No Krogers anywhere near us.

I will LOVE this salad!! I'll probably omit the peas because of the carb content, and I'll probably use the mixture of mayo and oil because I would probably like the taste better.......YUMMY!!!

When I make chicken salad, I use the chicken, celery, and mayo, but I also add dill pickle relish, as well. Gives it a little zip. And with my limited diet, I can use zip wherever I can find it!!! HA HA

i have found that pecans on top of the purple onions is also very yummy...
i use to have a fruit seven layer salad but i have misplaced it. Would you know it? i think the glaze is a pie filling.

Well, I probably wouldn't really replace the peas with something else, because I'm sure I'd get enough green veggies during the day without adding the peas. I really can't think of anything that could replace them in the salad. But for me personally, I'd probably get the extra serving from green beans or something at another meal. I can have plenty of green beans!!!

I have made a layered salad, but it has been years. I'm not sure if I remember, but it was a layer of iceberg lettuce, red onions, frozen green peas, water chestnuts then the dressing was mayo and sourcream. To reduce calories you can use low fat on both of those. I'll have to look this recipe up to see the exact ingredients since it has been so long since I made it. It is really good though.

One of you mentioned a fruit salad that used a pie filling as a dressing. I have heard of using the strawberry pie glaze on mixed fruit.
But, my aunt fills a bowl with mixed fresh fruit and then she melts a bag of marshmallows in a sauce pan on a very low heat, stirring constantly and then pours the melted marshmallow sauce over the fruit and mixes.
The melted marshmallows are clear. It just puts a light, sweet glaze on the fruit salad. Very yummy.

Marg...I live near a kroger and do my shopping there but do not buy from the deli very often. Usually pick up a roasted chicken near there tho. I will have to look that recipie up which should be on the container, if you bought it in one. Luv, Rosalie

Marg I found this reciepe on line...does this sound close to what you are looking for?
BEAN SALAD - MEXICAN STYLE
1 can green beans
1 can garbanzo beans
1 can kidney beans
1 c. chopped green pepper
1/2 c. sliced red onion
1 c. cider vinegar
1 c. sugar
1 1/2 tsp. salt
1/2 tsp. pepper
3/4 c. salad oil
1 pkg. taco seasoning
Drain canned beans, combine with green pepper and onion. Set aside. Combine remaining ingredients, except taco seasoning. Pour over vegetables, mixing well. Cover and marinate in refrigerator overnight or 24 hours, stirring occasionally. Before serving, drain, leaving small amount of marinade to toss taco seas with salad.

Actually, I imagine everyone has their family recipe.
I have always pealed and boiled my potatoes
Added diced onion, chopped hard boiled eggs and diced dill pickles
Then I add salt and pepper
And finally add Miracle Whip, a little mustard and a little sugar
Blend it all and eat it warm or chill it.
I have had potato salad with diced Spam in it and really liked it.
I have had potato salad with pickle relish in it and not liked it.
I have had potato salad with the skins left on the potatoes and liked it.
Some people dice celery in potato salad. Some people sprinkle the top with paprika.
Some people mash their potatoes instead of cubing them.
Some people put grated carrots in potato salad.
Some people use mayonaise instead of Miracle Whip and some leave out the sugar.
But you have my basic recipe.

... and some put that "proverbial kitchen sink" into it ... meaning a bit of whatever fresh vegetable one can find in the house. Here, I'll even parboil carrots in a bit of beef broth/bouillon, so they're not hard chunks, but yet a bit crunchy -- half-cooked.
Broccoli ... yum ...
Cauliflower ... also yum ...
Cheese, cubes of some good strong cheddar, etc, is a nice addition, too
Along with that celery & onions Barb B mentioned, sometimes a bit of pepper (red/green/yellow/whatever)
Also have had it with either dill or (sweet/spicy pickle relish) ... hmmmm ...
'Guess mine actually ends up being "potato-veggie salad" in the end.
Take a couple of the yolks from the eggs put into it and mash them up with mayo & mustard, and a few apropos spices ... dill, cominos/cumin, the usual salt/pepper (sea salt, here).
Oh, yeah! FORGOT to mention I heartily agraee with Barb's mentioning leaving the skins on ... ONLY way to make it ... unless potatoes have gotten a bit less-than-crispy-fresh ... then they must be peeled. :(
THEN it's hard to not eat it even for breakfast ... love it just about any time of day/night. ;)

My Mother makes excellent potato salad; however, she does not have a recipe.
boil potatoes
let potatoes cool and take the peeling off and dice potato in cubes
add onion
boiled eggs chopped
pickle relish or chopped sweet gerkins
mayo
little bit of oil (we use wesson oil best blend)
little bit of sugar
sometimes she puts chopped celery in it also

The easiest salad:
1 can of pineapple with juice (can be the small chunks or the "shavings")
1 small box vanilla pudding (do not make the pudding just use the powder)
1 regular size cool whip container
Other possible ingredients include walnuts or pecans maybe raisins.
In large bowl, mix pudding with pineapple - let sit a few minutes. Then add the cool whip and other ingredients you choose.
Chill and serve.
Its cheap and simple to make.

Moms Cottage Cheese Salad
small can crushed pineapple drained
1 container cottage cheese drained
1 box jello(whatever flavor sounds good with pineapple)
1 container cool whip
Mix and refridgerate for at least an hour before serving.. Tasty and simple!!
