We've discussed chili at length. Have we ever discussed white chili? Or chili made with turkey meat?

On our quest to lower cholesterol, we are trying to cut out red meat. I know I've had a chili made with navy beans, but I don't have the recipe.

Do you have a favorite recipe either for white chili or for chili made with turkey meat? Or do you just use your favorite chili recipe and substitute turkey for hamburger?

For white chili you just used white beans and white meat(chicken or turkey) in place of pinto beans or kidney beans and beef.

Around here, the gals use Rotel tomatoes in their white chili. Makes a spicer soup.

Oh, I love white chili. Dwayne and I have bought it, and our girls have made it, and shared with us. We need to get the recipe. Our olest daughter brought a large pot of it over, and said that cornbread was good with it. I made so much cornbread, that i had to freeze what was left. So, I had my cornbread already cooked for Thanksgiving dressing. Our family get togethers consist of at least twelve people, because Philip lives in Nashville. Sometimes we invite friends or church people, if it is planned ahead of time, and not just spur of the minute.

Weird, but Brits dont seem to be big chilli eaters, cant give you a reason why!

I basically just sub ground turkey if I am so inclined. Another good healthy variation is venison if you can get it.

Besides just switching meats, I've had it with a white/bit cheesy sauce, and cominos, giving it a spiciness of a different nature than regular red chili. Both are good! ;)

Wanda,

We love white chili! Here's my favorite recipe:

CHILI VERDE

4 cans pinto or navy beans
1 pound boneless, skinless chicken breasts (2 cups cooked)
1 4 oz. can chopped green chilies
1 tsp. ground cumin
1/2 tsp. dried oregano leaves
1/8 tsp. ground cloves
1/3 tsp. cayenne pepper
1 cup water
2 chicken bouillon cubes
1 tsp. minced garlic (1 clove)
1 tsp. salt
2/3 cup finely chopped onion

Cut chicken into 1-inch cubes; cook until no longer pink in small amount of water. Combine chicken with chilies and seasonings--set aside. Combine beans, water, bouillon cubes, garlic, salt and onion in a large pot; bring to a boil; reduce heat and simmer 10 minutes. Combine chicken and spices with beans. Simmer 10 more minutes.

If desired, top with grated Monterey Jack cheese.

(I actually like this recipe better made from dry beans as opposed to canned, but I've become lazy over the years . . .)

Thanks, Debi. 'Sounds more like what I've had [been too lazy to make it yet, but will have to soon; my taste buds are yearnin'! ;)]. Also like pinto beans in chill better than the usual kidney beans. 'Sounds so yummy!

Sounds delicious and almost exactly like one I found online yesterday. It had you mince your own two garlic cloves, use chicken broth instead of water & bouillon cubes, and stir in an 8-ounce package of shredded cheese. Guess that person hasn't found the easy(lazy) ways yet :)

Seeing this again about lunchtime makes me sooooooo hungry for it! Have some chicken in the freezer, have some beans [both dry & canned; sometimes I get lazy & buy canned, too ;)], chicken broth, et cetera.

Might be cooking some up soon!

In Texas they call chili a bowl of "red." Now are we going to have a bowl of "white." Should go good on a white snowy day, Gina. It snowed about 4 inches over night.

Now, I was long enough in TX to have heard re a "bowl of red." How'd I miss that? Anyway, we're having more than 4 inches here right now! [tho' it has been adjusted (again) down from a foot, thank goodness!]

i posted in the "snacks for super bowl parties" thread that i'm well known for my white chicken chili at ours ;) it didn't win the chili contest this year, but i've won in the past!

here's where i got the recipe, although ocassionally i'll tweak it to ingredients on hand, and make it a bit more my own.
