Last night was spaghetti bolognese with lots of parmesan cheese. It was very good.

No kidding! 'Sounds yummy! 'Heard buffalo is really good. ;)

It is!
The first thing you will notice is that it is very lean. If you cook a pot roast and let the broth cool the residual fat will only fill a teaspoon. It can be used in any of your favorite beef recipes.
We get our buffalo from a small local meet packing plant.

Yes, I've heard/read it's really lean, & I'd see it now & then at Trader Joe's or Wild Oats. As it was more $$, I didn't get it; now I don't recall seeing it here in Michigan [that was Phoenix where I saw it].

Oh, wait!! It would be cheaper to just find some buffalo here ... somewhere ... than for gas way out there, wouldn't it? :basic05

I fixed baked terryaki chicken breasts, steamed baby carrots and steamed broccoli with cauliflower. I fixed John a salad and I had applesauce.
It is now over. And I want dessert.

Since I am close enough, let me know the next time you put that soup together. I have promised Hal some of my cheese soup if he gives me enough lead time and you can join us as a quid pro quo.

My first intro to buffalo was as a kid attending the South Dakota District youth camp at a Forest Service campground in the Black Hills. They served buffalo at several meals. Pretty tasty.

Maybe you could use the broth from the buffalo pot roast for the cheese soup.

Friday nights are deli nights.. my husband goes to the store and picks up some deli salads and either sandwich makings or rotissere chicken. Easy for all of us after work and the end of the week.
