This morning it was Krusteaz Pancake Mix with a little oatmeal, applesauce, raisins and cinnamon added for a good variation.

That sounds so good! My kids always liked my from-scratch pancakes with nothing on or in them by maple syrup. Joe and I like some kind of fruit cooked in, though. Usually berries.

We used to make apple pancakes or banana pancakes all the time. Now we just do the "melt in your mouth" version on the back of the Bisquick box.

Stir in 1 Tbsp sugar, 2 tsp baking powder, and 2 Tbsp lemon juice.

Really good!

We also make hot syrup by using just brown sugar and water..2 parts of brown sugar to one part of water. That is how my grandmother always made it, and that is the only way we like our syrup.

I "doctor up" our pancakes all the time! Sometimes I'll add a bit of vanilla & a few sprinkles of sugar. Sometimes cinnamon. Sometimes cocoa powder & chocolate chips... Chocolate chip pancakes are ALWAYS a favorite in our house! :) One day recently I did cocoa powder & cinnamon...(I was out of chocolate chips) .. they were delicious & reminded me of gingerbread. I saw a recipe once for gingerbread pancakes, I need to see if I can find it again! :)

How much cocoa would you put in and do you serve it with syrup too? Just trying to figure out how that would taste.

My wife likes to try different things in pancakes. It's all good.

But nothing beats

Lori, I just put about 1-2 tablespoons of cocoa powder and about 1/2 tsp of cinnamon in the pancake mix. Yes, we still used syrup. The syrup helped give them the gingerbread taste. :)

I put walnuts and used to put in ham.

I like maple syrup but now am trying berry jam.

I have made the 'melt in your mouth' pancakes before. Now, I am into buckwheat from Krusteaz.

My kids used to get the biggest kicks when we added food coloring to the mix... blue, red, green Pancakes what a treat! (best part was making them with kiddos).

My husband makes Pumpkin Pie Pancakes...just a can of pumpkin pie mix (or you can use a can of pumkin and put your own spices in, we've done that, too), then add pancake mix and milk until it looks the "right" consistency. Yummmmm! He said don't use water instead of milk b/c it makes it separate strangely.

I've always been a purist.....but you guys have got me thinking. I might have a pancake buffet this weekend if I can get anyone home and try these ideas!

Buckwheat, huh? My favorite kind; don't really like the "white" kind ... "buttermilk." [nothing wrong w/buttermilk in them, but like the buckwheat flour, not the white flour ... but for some reason they always call the white ones "buttermilk," it seems]

I saw in an old ad the idea of cooking bacon and then pouring pancake batter around each piece on a griddle to make a bacon-pancake so I tried it and liked it.

My dad traumatized me as a kid by putting WEIRD stuff in his pancakes. I usually stick to plain OR blueberry pancakes or chocolate chip pancakes. For those of you who know me though, I'm really fanatic about the color pink. So I will share one pancake recipe tweak that I enjoy...

I take whatever amount of milk is called for in the recipe and reduce it by a bit. Then I take that milk and put it in the blender with a few strawberries. Blend well. THEN I mix the pink strawberry milk mixture into the pancake mix and all of the pancakes come out PINK and strawberry delicious! ;o )

I found a nice Belgian Waffle maker recently and so I have been trying different incredients. Today it was chopped apple, raisins, walnut and cinnamon. Not too bad.

I have a Magic Bullet little blender and today I added shredded coconut and banana to my waffle mix. Just mighty fine.
