i've got a recipe for an upside-down mandarin orange cake -- made with a cool-whip topping... it's SOOOOO yummy :)

i haven't had it in a couple of years, but it is DELICIOUS!

Here's a delicious recipe for Mandarin Orange Cake:

MANDARIN ORANGE CAKE

1 Duncan Hines yellow cake mix
4 eggs
1 cup oil
1 can Mandarin Oranges with juice (small can)

Mix together and bake in 2 - 8 inch round pans or 9x13 pans. Use directions on cake mix box for time and temperature to bake the cake. Cool on rack and ice with the following between layers, top and sides.

Mix: 1 – 9 oz. Carton Cool Whip
½ pkg. (small) Vanilla Instant Pudding
1 small can crushed pineapple, drained

It seems to be gone, Joanne. I'm not sure where it went! I happened to be looking for this very recipe myself a few days ago and couldn't find it. The recipe I'd posted is the same one posted by Johnnie, so I definately can vouch for it! :D

Here's a link to the recipe Johnnie posted. It has reviews by people who have made the recipe. I always find the reviews helpful. One thing I noticed about the recipe is that it has a lot of oil.
