i love coconut shrimp- not the healthiest but it is so yummy.

Would anyone know the recipe - and the sauce?

I felt badly when I saw that no one had posted this recipe for you by yesterday, so I entered "coconut shrimp" in google and got a major run-a-round trying to find one. I even clicked on a link that SAID 'coconut shrimp" and it opened to a page of recipe categories instead of the recipe. They wanted me to sign up for a free ring tone before accessing the recipes.

Anyway, I found some shrimp recipes, but not sure what you want. I did not know what you meant by sauce. There was a curry sauce with one shrimp recipe.

I was looking for the deep friend coconut shimp and never found it.

I FOUND IT! I found 4 different coconut shrimp recipes at www.kraftfoods.com/share.

I signed up to receive their free seasonal magazine of recipes, signed up for their monthly newletter by email and logged in to use their website search.

I emailed Yvonne two recipes that might be what she is looking for.

1 cup BAKER'S ANGEL FLAKE Coconut
1/4 cup flour
1 tsp. salt
1/8 tsp. pepper
1 lb. cleaned shrimp
1 egg, slightly beaten
Oil for frying



MIX coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture.
HEAT oil in large deep skillet on medium heat to 325°F.
ADD shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Serve with lemon wedges or a sauce, if desired.




I used a pina colada dip for the coconut shrimp. I used 2 containers of pina colada yogurt, a few tsps. of drained crushed pineapple and added some toasted coconut. My family loves this!

That's the web site I was talking about here (http://www.naznet.com/community/showthread.php?t=1623)! It's great. I use it all the time. The magazine is really beautiful. I've never tried any of the recipes in it, but I like to look at it. :)

Hi Belinda. just deleted my message...somehow. Anyway, question is how much oil do you use and what kind, in the skillet? I would use organic coconut and skip the sauce, and serve up with a rice dish. I like shrimp on a salad, tossed in. Any good recipies for that i wonder? Rosalie

Go to the link I posted above and just type in "coconut shrimp." There are 4-5 recipes and one of them is a salad.

Thanks for getting back Barb. I looked on that site and could not find a salad recipie, but thats not to say its not there. Anyway i can make a salad with shrimp added, or go to a cookbook here and look one up. When i think of shrimp i think of hushpuppies. They go together well I think, dont you? Rosalie

8 cups torn mixed salad greens
1 lb. cleaned medium shrimp
1 mango, peeled, pitted and cut into chunks
1/2 cup BAKER'S ANGEL FLAKE Coconut
1/2 cup KRAFT CATALINA Dressing



TOSS greens with shrimp, mango and coconut in large salad bowl.
ADD dressing; mix lightly.
SERVE immediately.

1 lb. large shrimp, cleaned
1 Tbsp. olive oil
1 cup pineapple juice
1 can (20 oz.) pineapple chunks, drained
2 cups MINUTE White Rice, uncooked
1 cup coconut milk
1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted
1 green onion, sliced



COOK and stir shrimp in hot oil in large skillet on medium-high heat 4 min. until almost cooked through. Add pineapple juice and pineapple chunks; bring to boil.
STIR in rice and coconut milk; cover. Remove from heat. Let stand 5 min. (If all liquid has not been absorbed, cook on low heat additional 2 min. or until liquid is absorbed.) Fluff with fork. Spoon onto serving platter; sprinkle with coconut and green onion.
