A recipe of my own creation, though I'm sure others have thought of it before
Ingredients:
Whole chicken breasts
Olive Oil
Whole garlic cloves (I suppose you could use dried if you wanted...)
Bacon
Cheese (I use Mozzarella)
Other seasonings to taste
Equipment:
Tin Foil
Backing Sheet
Frying pan
tupperware or other container
Pre-preparation:
Marinate Chicken in Olive Oil over night. I've never gone shorter than this, so I can't guarantee the effectiveness of a "quick marinade."
Preparation:
Fry bacon to desired level of crispiness.
pre-heat oven to 350
Cut slits lengthwise in the chicken breasts, stuff the insides with bacon (I crumble it) and Cheese.
Make Packets with the tin foil. I begin with a square, fold it in half, then fold the two sides in twice. The Shiny side of the tin foil should be facing inward.
Pour approx. 3-5 tblsp of olive oil into these packets (check for leaks and fold as necessary)
Add at least 1 small clove of garlic to each packet
Place chicken inside packet and fold up remaining end, again checking to make sure leaks are blocked.
Bake packets of chicken until done (our oven is very temperamental, can take anywhere from 30 mins to 45 mins, you'll have to figure that part out for yourself)
Removing chicken from packets, brown them on a griddle or frying pan. I like to use the same pan I used for the bacon for a little added flavor.
Serve with some home made bread. Sparkling White Grape Juice makes a nice Nazarene-approved pairing with this particular recipe.
