If you prefer a corn bread that is more like corn cake(moist and sweet) this might be a good recipe for you.
2 boxes of Jiffy* corn meal mix(the brand name matters, in my opinion anyway)
1 egg
1-2 spoonfuls of sour cream
a little milk
1 can of creamed corn
a little sugar
Mix ingredients and put in a greased baking dish. Bake until inserted toothpick comes out clean. Usually 15-17 minutes. Enjoy!

Jiffy cornbread mix is one of my favorites as well, Hank. And this recipe sounds yummy. Thanks for posting. :)
Jiffy is based in Chelsea, Michigan, just a few miles from me - and I am going to tour the factory with my youngest daughter and her 3rd grade classmates on Wednesday :)

I have trouble with corn bread for some reason. Maybe this would work.

I can't find Jiffy here in Toronto.
I went down to the states one year and brought back 20 boxes.
I was very happy for a long time!!
