Chicken Vegetable Soup
2 12 ½ oz cans of chicken breast chunks
2 cans of mixed vegetables
1 can whole kernel corn
1 can green beans
1 can diced tomatoes
Salt and pepper to taste
3 chicken bullion cubes
(do not drain any of the vegetables)
Put all ingredients except bullion in crockpot
Heat on high for 2 hours
Add bullion and cook 2 more hours on Medium
Bullion will season it so you do not need much salt
OPTION:
Put all ingredients in soup pan
Bring to a boil
Add bullion cubes
Simmer one hour
You can also use a can of fat free chicken broth instead
Of the bullion cubes. You will have more liquid.
I made this for one of our ladies who had cancer surgery last week. It is fat free, low sodium and soothing for anyone who is not well.
