Ingredients:
2 20 oz cans of pineapple chunks, drained. (reserve 6 Tablespoons of juice)
1 Cup sugar
6 Tablespoons flour
2 cups grated cheddar cheese
1 cup crushed Ritz crackers
8 Tablespoons unsalted butter, melted
Butter a baking dish
Stir together flour and sugar; stir in cheese with a fork
Add pineapple
Put this mixture into baking dish
Combine crushed crackers, melted butter and 6 tablespoons pineapple juice
Spread over pineapple mixture
Bake 25-30 minutes or until golden brown.
Serve hot with bagel crisps(the cinnamon bagel crisps would be great) or Ritz crackers.
This is fantastic all by itself.
