View Full Version : Cheese Soup recipe from the Better Homes and Garden Cookbook

which gave to my fiancee in 1962 when she said she was not fond of cooking. By request.

Cream of Cheese Soup

1/2 cup of grated carrots
1/2 cup chopped celery
1 cup of water
2 tablespoons of chopped onion
1/4 cup butter or margerine
6 tablespoons enriched flour
2 cups milk
2 cups chicken broth or bullion
1/2 pound sharp cheese, diced

Cook carrots and celery in boiling water till tender.
Cook onion in butter till tender but not brown.
Stir in flour. Add milk and chicken broth; cook over
low heat till thickened, stirring constantly.

Add cheese; stir to blend. Stir in vegetables and
cooking water. Serve with chopped parsley.
Makes about 6 cups.

My variations include the fact that at my local
store I can get powdered cheddar which I combine
with more milk. I also add either crisp bacon bits
or bits of browned sausage, either ground or cut up
links. I use a crock pot for the final stage.

I will be making this for the participants in our Live Nativity Scene Dec. 7-9 which is earlier than previous years so that our college students can be included.

Finally! Something Jim and I agree on.:basic05

The BH&G cheese soup recipe is a favorite at my house, although we tend to not follow it very closely, in fact Londa knows the recipe well enough that we didn't even bother to get the book out when we made it this weekend. We usualy add minced garlic, ham & broccoli to the soup. We will use whatever broth we have leftover from a previous meal, and often we serve it in hollowed out sourdough bread bouls.

We don't bother boiling the carrots & celery, we just cook them in the butter with the onions & garlic. Often, we use both cheddar & velveta cheese. We add everything to taste, so the soup is a little different every time we make it. This time we used broth left over from last weeks ham. I think it is better with chiken or turkey broth.
