Joel,

I was reading this recipe and it does sound delicious!! Question...
It says...use remaining mix and put in skillet till it boils, The remaining mix, did they mean the marinating mix the salmon was in?
I kinda thought so...but most receipes say discard the marinate. I figure due to the raw meat being in it. BUT it says to cook it till it boils...so maybe that cooks the bad stuff out!?
It sounds like it ought to taste alot like the glazed salmon at Applebees resturaunt. Thanks for sharing Joel!

Boiling probably would kill any germs. What I did was make a little extra marinade and save it. I just happened by chance to be drinking some unsweetened pink grapefruit juice when I ate it. They were very good together. I may even try the marinade with grapefruit juice the next time.

Thanks. We'll have to add honey to our mix. We already use lime, Worcestershire, onions, dill, maybe some horseradish, etc.

Also, that mustard doesn't sound bad, either. But, adding a bit of sweet to the rest of what I do wouldn't be bad at all. We'll have to remember adding honey next time. ;)

Thanks Joel,
Thats a great idea to just make extra marinate and use that.
The grapefruit juice added would probably be great. Would you use it in place of the Lime juice or just use both?

I would use it in place of the lime juice. I have a small confession to make. I didn't have any lime juice so I used lemon juice.

I think it probably didn't matter too much whether it was lime or lemon...it was "citrus". Not a chef or a chemist, so I can't explain..but something in citrus juice does something to fish!
Thats why the grapefruit juice will probably work just as well to.

Right, Wendy ... it's citrus. BTW, speaking of citrus, most places, if they put anything in the water, it's lemon. Knowing that lime is something used for drinks sometimes, and having always favored it over lemon, anytime I've been in a restaurant that appears to have drinks (alky), figuring they'll have lime, I try to remember to ask for lime in my water instead of lemon. Love that lime!

Actually, I often tend to ask for ICE, rather than water. For some odd reason---as tho' ice needs to be clean but water doesn't(?)---they often do not filter their water and it's that nasty chlorinated water (tastes "yuck!"), and yet if you pick out a piece of ice, it's nice, clean filtered H2O that it's made from, and you don't taste that chlorine. They add a filter to their ice-maker, but not their faucet, or something ......... strange!

So, it's lime with ice, if they have the lime. ;)

Have to try grapefruit (usually have some in the house) with fish sometime instead of, or along with, lime. That does sound yummy!!
