OK, Autumn is long gone... and a long way off. Do you have a spare can of pumpkin puree you did not use over the holidays? These are really good and have a slight cake-like texture to them. I love it with a cup of coffee or iced tea.


PUMPKIN COOKIES

1/2 cup unsalted butter (or margarine)
1 1/2 cup sugar
1 egg
1 cup of 100% Pumpkin Puree (such as Libby's)
1 tsp. vanilla extract
2 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 cup nuts (optional)
1 cup semi-sweet chocolate chips

Cream the butter and sugar. Add the egg, pumpkin, and vanilla.

Blend all dry ingredients together in a seperate bowl. Then mix together the dry and wet ingredients, finally adding chocolate chips and nuts last.

Bake at 350 degrees for 15 minutes-til lightly browned.

I would prefer raisins in place of the chocolate chips. I know it is hard that Mrs. Chocolate would choose raisins over chocolate chips, but I have had these cookies. I like the taste of raisins with the pumpkin instead of chocolate.

Just an idea for an option. These cookies are great!

I have tried a little cream cheese frosting and called them "Frost on the Pumpkin" cookies.

That sounds good Joanne. This recipe is sweet, I'd personally be afraid that would make them overwhelmingly sweet. But sounds tastey. Like the name too! Cute!

I just add enough to justify the name. If you make it homemade you can control the sweetness to instead of canned. Almost put caned instead. :basic02 I also would not use choc. chips.
