			<content:encoded><![CDATA[<div>I've got some boneless, skinless chicken breast halves marinating in olive oil, basalmic vinegar (just a splash), oregano, basil, salt, cracked black pepper, crushed garlic, red pepper flakes, and onion powder.  I'll let them marinate for several hours.  <br />
<br />
Depending on the weather when it's time to cook, the chicken breasts will be either grilled outside over charcoal or pan cooked.  While they &quot;rest&quot;, I'll saute onions and mushrooms in EVOO, add salt, pepper, and a little bit of chicken stock or maybe white wine.<br />
<br />
Chicken breast will be laid on a bed of wilted baby spinach and drizzled with the onion and mushroom sauce.  Maybe some crumbled feta on top???<br />
<br />
Joe <b><i>insists</i></b> on having &quot;starch&quot;, so I've got some herbs and crushed garlic infusing some more EVOO.  He can have some crusty bread dipped in that.  He'll be a happy, happy man!<br />
