    HELP: Need rhubarb recipes!

My good friend - the Presbyterian pastor down the street - just delivered a large shipment of rhubarb from his garden to my humble abode.

I love strawberry rhubarb pie, and would love a good, time-tested recipe for it.

Also, any other recipes using rhubarb.

    Suggestions?

Rhubarb Crisp!! YUMMMMM... served warm, with a scoop of vanilla ice cream, it's one of the most delicious summer deserts I can think of!!

Here's just one example of a Rhubarb Crisp recipe - similar to what my mom makes: http://southernfood.about.com/od/fru...r/bl30623m.htm

This is a pie recipe that my mom makes all the time. Anytime family comes home, they request it.

    Rhubard Custard Pie

    1 pint milk
    1 tsp. flour
    3 beaten eggs
    1/2 c. sugar
    pinch of salt
    rhubarb (finely chopped)

Heat Milk just until warm. Rub flour smooth with enough water to make like paste. Add this to hot milk. Pour eggs, mixed with sugar and salt. Cover bottom of unbaked pie shell with finely chopped rhubarb. Pour custard over rhubarb. Bake slowly never letting it boil at 400 degrees for 10 minutes, then 350 degrees about 1/2 hour

    1.Peel rhubarb.
    2. Salt rhubarb to taste (preferably liberally)
    3. Eat rhubarb.

I can't grow rhubarb in Arkansas which makes me sad but I am EN route to Michigan right now (typing on my phone) and we will overnight at my in-law's house where I planted some years ago and I am SO VERY excited to get to eat some tonight.

When we were living in the Bethany, OK area and members of Calvary Church we attended a potluck at which there was my favorite pie, strawberry rhubarb. I asked Pastor Carl Summer if there was going to be strawberry rhubarb pie in Heaven and without missing a beat he replied, "Yes, and there is proof in the Bible, 'every good and perfect gift comes from above.'" Enjoy your heavenly dessert, Kevin and y'all.
