    Breakfast hash

    Grated Idaho potatoe, chopped onion, chopped green pepper, prepared bacon, egg, cheese. cook in frying pan covered, add egg toward the end and then add cheese just in time for it to melt in with the rest of the mix. Yum Yum. Cooked bits of corned beef or sausage could be used in place of bacon.

    Bill, this is an Olympic year so "go for the gold." There is no substitute for an Idaho Russet.
