    Creamy Zucchini & Coconut Milk Soup

    ZUCCHINI lends itself to being hidden in many recipes, but is the star in this delicious soup. Having made it twice, it's now been added as a keeper. Here is it garnished with smokey paprika, and I think it would, also, taste great with chopped cilantro. If you have an abundance of zucchini from your garden, this is one good way to use it.

    AGREED! Since they have such high water content, they provide that magic in certain recipes. Also, they are good as "noodles" for a delicious uncooked lasagna recipe I have. Slicing them for that is easy, and using a spiral cutter provides yet another way to present.
