CHICKPEA SALAD WITH RED ONION AND TOMATO (recipe courtesy of the Marlboro Farm Market & Garden Center, Bridgeton, NJ)
Yield: four servings
19 oz. garbanzo beans, drained
2 tablespoons red onion, chopped
2 cloves garlic, minced
1 tomato, chopped
1/2 cup chopped parsley
3 tablespoons olive oil
1 tablespoon lemon juice
salt and pepper to taste
In a large bowl, combine all ingredients and salt and pepper to taste. CHILL for 2 hours before serving. Taste and adjust seasoning. Serve. Chilling makes all the difference in this great salad!
