    Are you ready for some delicious Chocolate Cake?

    THIS cake comes compliments of Elena's Pantry and is oh-so-good and oh-so-good-for-you. This I've made twice and not a crumb was left either time. It is gluten-free, dairy-free, and nut free, and one would "swear" it was from the finest bakery anywhere. Well, it probably is if from your kitchen via Elena's.

    Chocolate Cake
    * ¾ cup coconut flour, sifted
    * ¼ cup cacao powder
    * 1 teaspoon celtic sea salt
    * 1 teaspoon baking soda
    * 10 eggs
    * 1 cup grapeseed oil
    * 1 ½ cups agave nectar
    * 1 tablespoon vanilla extract
    * ¼ teaspoon orange zest

    1. In a small bowl combine flour, cacao, salt and baking soda
    2. In a large bowl using an electric hand blender, blend eggs, oil, agave nectar, vanilla and orange zest
    3. Add dry ingredients into large bowl and continue to blend
    4. Oil (2) 9-inch cake pans and dust with coconut flour
    5. Pour batter into pans and bake at 325° for 35-40 minutes
    6. Remove from oven, allow to cool completely then remove from pans
    7. Frost and serve

    Serves 12

    Vegan Chocolate Frosting
    * 1 cup dark chocolate chips
    * ½ cup grapeseed oil
    * 2 tablespoons agave nectar
    * 1 tablespoon vanilla extract
    * pinch celtic sea salt

    1. In a small saucepan over very low heat, melt chocolate and grapeseed oil
    2. Stir in agave, vanilla and salt
    3. Place frosting in freezer for 15 minutes to cool
    4. Remove from freezer and whip frosting with a hand blender until it is thick and fluffy
    5. Frost over cake
    6. Serve

    The two photos below are of the same recipe and mine was for a birthday party, made just the way the child wanted it - single layer decorated with flowers and candles.

    Yum!! Think coconut flour could be made the same way I have often made oat flour ... old-fashioned oats in the coffee grinder?? (have some organic unsweetened coconut flakes here)

    Sounds excellent -- this will be the second cake recipe that you have posted that we will try!! the first one was delicious -- I can't remember exactly what it was now, but I remember that I made it twice, and my family loved it!! ha ha I'll have to pull out the recipe again!!

    I use agave nectar all the time for a sweetener and it does not disturb my blood sugar. So this will be a cake to try in the near future for some special occasion. Thanks!!

    THANKS, Dana. One comment regarding the cake icing is that I either make my own chocolate chips or purchase ones that have no sugar in them. It's often easier to make your own than search for the others.

    That other cake I posted is delicious, too, and was the Raspberry Chocolate Tea Cake which came from Beyond Parlsey, a fabulous cookbook from the Junior League of Kansas City.

    ANOTHER one was made today for a good friend's birthday and it is on the same plate but with nine of the marigold flowers (three rows of three) and looks even prettier.

    Edith, tho't when seeing this thread added to that we might find if you have ever ground the coconut into flour. Do you, or do you buy it that way? Thanks!

    GINA, I haven't ground coconut into flour, but just always purchase it that way. What I have done is taken shredded coconut and put in the VitaMix for a few seconds just to get the shreds smaller for some things I'm making.
